Particularly after his bout with demon blood addiction, Sam had made a point to not lie to Dean. Better that way.
He tells Dean the truth, always.
When Dean asks him if he'd been tortured in Hell, he says yes, but that he doesn't remember. Doesn't remember his own flesh being melted off, face disfigured with white-hot pokers, knives slicing through limbs like butter, body carved up, defiled, piece by piece, day by day. He looks Dean in the eyes, hazel to green, and says he doesn't remember. Dean believes him.
Sam isn't a liar.
Sam is a perfect liar.
