Letting this pairing out of my system. I was inspired by the song "Lightning" by Alex Goot. I thought it would fit this pairing perfectly.

Sweet Sensation
She was a static bolt of energy. She had a bubbly laugh that ended in a dorky snort. Her blue eyes were like the high sky or the ocean below. Her mane resembled cotton candy... maybe even good enough to eat. Her grin, bright and radiant, was willing enough to put a smile on his face when he was having terrible business that day. She bounced willy-nilly around the little shop and offered to purchase any ingredients that he needed from the market, or bake any special kinds of delicious donuts that were the afternoon's special.
He wished that she could have stayed in Cantorlot just a little while longer. He would have really liked an optimistic assistant to work with. He knew that she had a home in the center of Equestria. Ponyville. At Sugarcube Corner. With Mr. and Mrs. Cake. Her friends. Her family. Her home. She wouldn't dare to move away to a faraway place just to be with... him.
His brain rustled around, looking for flaws. Eventually he found them.
He was boastful with a thick streak of pride. There were times where he was loud and obnoxious and brash in a simple situation and had a temper whenever anyone interfered with his love of donuts. After living in denial for so long, he came to terms with himself. He was a jerk. Perhaps he could work these flaws out, but not only for himself.

For Pinkie Pie.
Because if there was one thing that Joe loved other than donuts, it was the incredible and infamous partylicious perfect pony, Pinkie Pie.
