This is just my (short) take on Ross and Julie's break up that we never go to see on the show.

Ross looked down and sighed before knocking on the door. Breaking up with Julie wasn't going to be nice or easy but it looked like he finally had an opportunity to be with Rachel and it wasn't something he could give up because he was already in a relationship. He might never get another chance again.
"Hey sweetie, do you want to go and look at kittens again?"
Ross looked up when he heard Julie speak. "Actually can we talk?"
"Sure what' up?" Julie tried to keep her voice calm as Ross made his way over to the couch. She remained standing next to the bookcase by the door.
Ross took a deep breath before having to say the words anyone in a relationship dreaded hearing, "I think we…I think we should break up."
"What? Why? I thought we were happy, what changed?" Julie stared at him in disbelief.
Deciding honesty was the best policy, Ross told her the truth. "Its, I … its Rachel."
"What about Rachel? I thought she was your friend."
Avoiding Julie's glare, Ross looked down. "She was, she is… before I went to China I had had feelings for her but Chandler convinced me she would never feel the same. Then I met you and I forgot about Rachel in that way… but something has happened. I think she feels the same way and I've got to find out if there is something there but.."
"Oh my god!" Julie interrupted him as she recalled how strange he had acted yesterday after going to his sisters apartment and then the song Phoebe had been singing earlier in Central Perk:

"Oh my god! Phoebe's song was about you wasn't it? You've kissed her haven't you?" As she voiced her realisation the look on Ross's face confirmed it. She felt the hurt and anger build as tears escaped from her eyes. "I can't believe you'd do that to me, I'm such a fool. I thought you cared for me, loved me but all this time you were wishing you were with her!"
"It wasn't like that, I did care for you, it's just…"
"Just what Ross?" She shouted in anger, throwing a vase from the bookcase at him which just missed his head and shattered against the wall behind him.
"Woah, calm down" Ross exclaimed, ducking as she threw a book at him.
"Why should I? You used me and now that Rachel feels the same your dumping me" she said as the next book hit him in the chest.
"I honestly do care about you, but Rachel has been my dream for so long and I've got to give it a chance. I'm so sorry I've had to hurt you in the process, truly I am." Seeing that she didn't look like throwing anything else Ross approached her. "I really am sorry… haven't you ever wanted to be with someone but never thought you it would happen only to get a chance when you least expect it?"
Julie gave him a heartbreaking look, "Yeah, there was this guy in grad school I really liked but he was married and then I met him years later and found out that he was divorced."
A tear fell down Ross's cheek. "I'm so sorry Julie, you have to believe me."
She turned away from him, "Just go Ross before I throw something else at you."
"Under different circumstances I do think we could have been happy." Julie nodded silently, still not looking at him. "Well … bye and sorry again."
As he walked towards the stairs Ross heard a bang, which he was sure was a book hitting the door he had just closed. He felt bad for Julie, but he couldn't stay with her knowing that Rachel had feelings for him. This was the chance of a lifetime and he was going to grab it with both hands. Nothing was going to screw this up.
