Zuko had always looked up to his father, and held his uncle in disdain. It took him some time to learn that he had it backwards.

Zuko convinced himself that he could earn his father's love and respect, not understanding that love cannot be earned; it must be given freely.

Zuko couldn't remember ever seeing his uncle anything but calm, even in the face of chaos and disaster.

Zuko could not believe that Iroh had changed the course of his ship—Zuko's ship!—for shopping!
Speculation
In his deepest, most private thoughts, Zuko had considered what he might do if he were Fire Lord, but, although he was the prince of the Fire Nation, he was in exile; therefore he didn't allow himself to think of such things.
Fascination
Capturing the Avatar had become an obsession, and only Zuko could not see his own blindness to everything else.
Consternation
Zuko could never understand why Iroh loved tea so much; it took so infernally long to make and had to be drunk slowly unless one wished to be burnt.

Iroh's answer to every hurt, from a skinned knee to a broken heart, was a cup of tea.
