Arthur was serious about this industry. He did not let his love, fear, or any emotions come into play once he stepped into a dream. He kept his professional life and his personal life completely separate. Thus is why he warned Cobb about not getting involved with the dream-memory of Mal; good advice that should've been listened to from the start.
So he knew, because that was his job. Arthur was employed to research every little thing related to their procedure, to be ready for anything. Therefore, he knew every little consequence that could've happened from kissing Ariadne.
Yet he did it anyways.
As Arthur explained the stares of the projections, the small thought popped into his head, and finding opportunity knocking...
"Quick, give me a kiss."
Aware of all of the negative effects of his action, he was honestly dying to feel her soft lips. The idea, the urge had been gnawing on him since she first woke up gasping after Mal stabbed her. She was angry and furious, and he had never seen such fight in any pair of eyes as he tried to help her. He kept his eye on her ever since. He knew the possibilities of them ever getting together, of her even liking him. So he made his own chance; his own luck, even if it was in the smallest amount. Because he had to.
"They're still looking at us…?"
Arthur gave himself a pat on the back for accomplishing one of his innermost desires. Holding back his cheeky grin, he gave her the only reply he could think of.
"Yeah, it was worth a shot."
And that it was.
