Hermione was dying and the Unicorn saved her life. She didn't know then she would bound to it for the rest of her life.
That she would have to remain pure for the rest of life because Unicorns were the purest of creatures. No, she found out all that stuff later when it's far too late to change any of it.
In one moment her life was saved to live a life curse of purity.
What was worse, she was sure that the Unicorn did it on purpose because it was lonely and had been rejected by the other Unicorns.
