She would submit to him, that's what he liked most about her. Hermione acted the way he wished his wife would, but was never going to.
He knew her submissiveness came from wanting to survive. If the opportunity were to arise where she could kill him to escape, he doesn't doubt she would take it, but at least, she was willing to act like she wanted to submit to his will.
She acted the right way in public, her eyes on the floor and always obedient. Never taking every opportunity she can to belittle him.
She did what he asked when he asked it and that's what he liked about.
