She is certain that underneath his desire to feast on her flesh and brain, there is something left of who he was before becoming a zombie.
That's why she's yet to kill him because she believes there's a way to reverse the whole thing. That a scientist somewhere will announce a cure, and things will end up okay.
Maybe it was foolish to hope or cruel to leave him alive as this monster, but without hope or him there was no point in surviving any of it.
