There are many chicken with shiitake mushrooms recipes in the web but today this is my very own recipe that I learned from my mum. Flip the chicken thighs over and add the fresh herb sprigs and the lemon slices. Baked boneless skinless chicken thighs turn out less juicy. I use canola oil to sear chicken thighs, but olive oil, coconut oil, or avocado oil will work. That means if you go to take a shower while your chicken is in the oven, and the timer beeps an extra 2-3 minutes, it's not a big deal.
All quick and easy to make, our best recipes using chicken thighs pack a flavour punch. So, we always cook skinless thighs to 165F. In a bowl whisk together until combined 3 Tbsp ranch seasoning, 1 Tbsp smoked Paprika, 1 tsp black ground pepper, 1.5 Tbsp garlic powder, 1.5 tsp salt and 4 Tbsp of oil.

3. Try getting lots of flavor into your chicken, whether it be breasts or thighs, by marinating for several hours prior to cooking. Cook without moving for 7-9 minutes so that the fat can render and the skin can get nice and crispy. When the meat closest to the bone is cooked through, the chicken is done.
Preheat oven to 500F degrees with the baking rack in the middle. Maybe reduce the cook time to about 20-25 minutes, and I think covering them for the last little while should help them not dry out. Skip browning the chicken thighs, place boneless, skinless chicken thighs on the trivet (over 1 cup water) and cook for 6 minutes on high pressure.

A sheet pan or roasting pan is ideal for this baked chicken thighs. Cook an additional 25-30 minutes, basting with the sauce a few times during cooking. Fortunately, you can get similar crackly skin with bone-in thighs and hands-off roasting in a very hot oven. Add all the chicken in small batches and stir-fry it for about 2 minutes or so, or until it becomes golden brown and return the chicken to the wok.
