My Ships/Pairings:
Ron/Hermione (in canon, though; I won't read any fanfic just for R/H)
Harry/Ginny (I'm not positive that it'll happen, but I think it's the most likely romance for Harry)
Harry/Luna (I could like this, if Harry were to end-up with someone other than Ginny)
James/Lily (in canon and fanon because one can never have too much James)
Remus/Sirius (only slash pairing that I'll consider in HP, because it's the only one that seems remotely possible; I don't necessarily think it's canon, but I do think that the possibly is there and it's not OOC for either of them)
Remus/Tonks (I like the pairing, but it's done very, very badly in most fics except for Shifts, which is probably the most in-character fan fic that I've even read, and obviously one of my favourites since I'm mentioning it here)
Canon Character/OC (as long as the OC is a fully-developed, believable character)

My Favourite Characters:
HP: Remus Lupin, Sirius Black, James Potter and Peter Pettigrew (okay, I don't really like Peter, but I do like reading about him). Obviously I'm interested in many other HP character, but these four in particular fascinate me.
SW: Anakin, Luka, Leia and Obi-Wan fascinate me the most, though I'm quite interested in pretty much everyone else as well: Yoda, Mace Windu, Han, Chewbacca, etc.

What I Like Reading:
Pretty much anything involving Remus, Sirius, James or Peter; as long as it's in character, I'll read it. Although I do favour stories that focus on their friendship and how they interact with each other, rather than the rest of the world.
