Why Kagome and Inu-Yasha should be together
SPOILER WARNING IF YOU HAVE NOT SEEN PAST EPISODE 126

Well in episode 124 Kikyou is killed by Naraku and falls off a cliff.
In episode 126 Kagome admits her love to Inu-Yasha even though he is not present she says it to the human heart of Naraku Akago. Therefore Inu-Yasha and Kagome should be together. Kagome says "I love Inu-Yasha!" I know Kikyou comes back but can you not see how she silently pushes them together.

Why Yuusuke and Keiko should be together

Right before Yuusuke leaves to Makai he proposes to Keiko that in three years time they will marry and she excepts. That pretty much spells it out.

Why Kenshin and Kaoru should be together
Spoiler if you have not seen Seisouhen

Well Kenshin and Kaoru do get married and have a son. I would understand a Kaoru alternate pairing for the way he left her obviosly shows his guilt is more important then his love but I still love the pairing.

Why Ranma and Akane should be together
Spoiler if you have not read the manga

Well we all see during the battle with Saffron how much Ranma cares for Akane When he thinks "I just want to tell her I Love Her!" And Akane's love is obvious I mean how many people can read Ranma's heart so she thinks that he says "I love her" and they have a fight about it when she says that he said that he loves her. But not many regular lovers can look into the others heart. However it is not clearly spelled out in the anime but pretty evident in the OVA with Shinnosuke how they felt about each other.
