Aspect of Avalon -
Due to being merged with Avalon, Shirou can trace Avalon to perfection, in remembrance of his promise. In search of a way to reunite with Artoria, He has slowly taken on the very aspect of Avalon, and slowly his reality marble too changed to the ever distant garden with unlimited swords, as they accompany him in his search. His mana now has the nature of Avalon allowing negligible degradation in his projection. He can also use it to its entirety. It also allows the reality marble to act as a mana reactor core. He will forever remain her sheath.

The Mind's eye is high because he is trying to fight like Saber, i.e. trying to use instinct.
Mana Burst for that same reason.
Yes, he can still trace Avalon as it is one of his most important connection to Saber. I mean come on, how can he forget her so easy. I came up with this idea seeing him against Berserker in HF, tracing Berserker's history. He is doing the same with Artoria.
