I think, when it comes to any smut, you just need to write what you think it's hot/think the characters would be into. It IS going to be awkward at first, and if you're too unsure, write it but don't publish it. Look at it again after a month or so, work on it more, and keep repeating that until you think you feel like you got it right.
As for Zucest smut in particular…
They both like to tease, and Zuko reacts to things VERY intensely, which always amuses Azula. Regardless of whether you're writing a more "vanilla" scene, or you're making one of them doming the other, keep in mind that there's always some form of power play between them. They both like seeing the other submitting to them, and they both feel a bit of a thrill and relief when they're able to just give up on trying to keep control all the time.
And, obviously, they love each other to an insane degree, and they just have a natural chemistry/compatibility that makes them practically unable to resist each other.
