If incest was illegal in the Fire Nation (or whatever country they would live in if we're talking a modern AU), they'd have a secret wedding. If it's in the canon timeline, they'll probably blackmail and/or threaten a few people to make the wedding happen, and then once they've gained enough power, they'll legalize incest and make their marriage public. In a modern AU, if the law doesn't change it will just be their secret; if it does, they're gonna have another wedding (be an official one or just a symbolic one if incestuous relationships were legal, but not marriages).
As for the legal weddings (official or otherwise, canon timeline or not) oh boy, they're going BIG. Expensive clothes, decoration, and food. Great musicians playing, grand speeches, fireworks, hundreds of people at the event, the whole world talking about it. It'd last the whole night, and then they'd go to their even more absurdly luxurious honeymoon.
