1 year later:
Lucy: Lucy finally found a position at a private school. She's so good with children. Even though she doesn't babysit Noah anymore, she still comes to family dinner. Alex even introduced her to a young new ADA. She and David Haden are dating.
Kim, Nick, and Olivia: Kim and Nick got married. Nick finished school and entered the police academy. He now works at SVU with Olivia. Kim is working hard and plans to head to law school eventually. She actually ended up pregnant again thanks to the summer beach trip and gave birth to a baby boy they named after Nick.
Fin and Melinda: Fin and Melinda eloped and tied the knot in Vegas. They waited and took Olivia and Amanda right after Thanksgiving so Amanda could gamble legally. Melinda is three months pregnant with a baby girl.
Alex and Peter: They were pissed that they weren't invited to the Vegas wedding, so they topped that by eloping at Christmas. When they were a no show for dinner, everyone received a group text of them on a plane headed to Belize for their honeymoon.
Amanda and Olivia: As Noah turned 2 a few days later, Amanda and Olivia welcomed twin girls. They are completely done, getting a two for one deal. They named them Jesse Beth and Billie Anne. Olivia took over SVU when Cragen retired and Amanda is turning heads at the Bureau. Every Wednesday is still family dinner and they all take the same week vacation to visit the Georgia beach house.
