No, I've touched the dark, and it can take days for even a hint of blue to show after the gold appears.
Not if you use some force tricks to mess with your eye color. For all you know, she's just showing off those tricks so it's easier for her to kill you...

I started touching the light a little, to try to heal the wounds that I got after a mission to hunt down some Rebels went a bit wrong, and I ended up getting hurt, and not too long later, my Sith master punished me, by using Force lightning. That stuff hurts a lot. I'm studying Darth Gravid's teachings in secret, and starting to agree with his ideas and plans, but am trying to do it without gong insane, like he did. He used the dark mostly, but also the light. I'm sending you a few of his teachings. You might find him interesting." Anakin pauses the video and compares his former padawan's eye color now to the video's start. Her eyes are bluer, not more golden.
She could just be using those Force tricks...

Remember the legend of Darth Revaner, the Jedi turned Sith who came back as a Jedi when she was an old lady. She saved her only granddaughter's life when Alyssa, a powerful Jedi Master was dying at the hand of Darth Ralvenx, Revaner's Master in a lightsaber fight. Darth Revaner, who went by Raven as a Jedi called her old blue Jedi saber, which she hadn't used for several decades to her from the Jedi Temple on Naboo. She was unsure but after seeing the dying Alyssa she took off her mask and killed Ralvenx, then transferred her life force to Alyssa, along with her saber. In her last moments she sent a message through the Force to Alyssa.
"I felt torn for years. I am the Jedi Knight Raven again. I fell to the dark side because of love but come back because of my love. Love for you, Alyssa my only granddaughter. Now I feel whole again. Whole like I haven't felt since I was a Jedi. For years the dark in me ruled. Now the light, hidden deep inside for decades rules. I want you to live. Keep my saber as a memory that even the darkest Sith can come back. You are the Jedi I never was or could be. I want you to be the best Jedi Master you can be."
Before Alyssa got this message, she thought Raven got the saber when she was a Sith by killing a Jedi, but Raven told her "I made this saber years ago, just before falling to the dark side. I called it back from the 2nd Temple, the one on Naboo to help save you. Don't try to stop me, I've made up my mind. You're too weak. I'm doing this to save you. I can't see my granddaughter dying without trying to save her. It's my only weakness. Keep my blue saber. It should call to you, Alyssa, as the closest related Great Jedi. Keep it. In your dark hours it will help you save yourself and others."
Also, I had writer's block on this and the only way to get unblocked was to do all those thoughts of Anakin. Parts of Anakin's brain in a conversation.
