Zuko would immediately stop everything, hug Azula, comfort her, promise that he'll make sure no harm will come to their little family, and ask to see their kid.
Azula will definitively cry seeing him holding baby Izumi for the first, and looking at their daughter like she's the most precious thing in the world. And Zuko, seeing his sister treating their baby so well will feel deeply ashamed that he ever abandoned her (even if he had a good reason to do so) and was even willing to kill her as if she were just an enemy instead of the woman he had loved his entire life.
From that point onwards, anyone that so much as thinks of telling him he shouldn't be with Azula, that he should have a kid with someone else and revoke Izumi's right to the throne, or that he should separate the two of them so Azula won't "influence" Izumi is going to be in incredible danger. He'll also ask his sister-wife what happened during the months he was away, and if their father mistreated her and/or their kid, Ozai will find himself REALLY wishing Aang had killed him.

I feel like Iroh would be so worried about the 'My 14 year old niece and my 16 year old nephew are now parents' aspect of it that he'd forget about all the other issues he'd normaly have.

That makes perfect sense. Hell, in this scenario he might actually (reluctantly) be on their side and make sure nothing comes between them, since he can see that, while they're good parents on their own, they quite clearly need each other. Plus, he knows the pain of losing a kid, so he wouldn't want to separate a mother from her child, even if said mother is Azula and the child is a product of incest.
