"I'm doing what I have to do," he says. He sits there with his book, jeopardizing the finally-formed bond she's worked so hard to create. He's driven out Lorelai once, she's not about to let him do it again. (She absolves herself in moments like this.)
She makes up her mind, quickly and without consulting him, just like he's done to her. She takes her favorite sweater and good pearls, and leaves him with his secret lunches and shameful business deals.
She can be as practical as he pretends to be. She's doing what she has to do, too: leaving.
