I feel like in any sexual act these three do, there'd be some little things that sort of give away who they are - which also means that he'd be very quick to notice if his girls tried to trick him by bringing in someone new. The reason they would do that in the first place is because Zuko would tell them what their style is - except for Azula, because she looks really cute when she is all indignant. They would tell him what his style is as well.
Mai probably starts of very slow and seemingly a bit distant/cold, only to get progressively more intense and passionate as it goes on and she relaxes/gets even more turned on. I feel like they're all switches, but Mai is probably the one whose submissive and dominant side are more balanced out.
Ty Lee is probably the most affectionate and "soft" one. Don't get me wrong, she's strong as fuck and she can be really rough when she wants to, but there's nothing she enjoys more than pleasing the people she loves. Also, something about her just screams "power bottom" to me.
