Zuko gets even more dramatic, emo, angry and reckless than usual (yes, that is possible) because he simply has NO FILTER when drunk. In a scenario where he was not yet dating the girls, his restraint around them (mainly Azula) is gone and he is completely shameless about how much loves them AND lusts after them. He only gets hung over when he gets absolutely fucking WASTED, otherwise, he's fine the next day.
Mai gets far more relaxed, affectionate, and, dare I say it, friendly. She rarely does anything embarrassing, but she hates how sweet she acts when drunk, which is why she usually only drinks when she's solely with the other three, since she's comfortable with them. Her hangovers are rarely all that bad, but they make her even more irritable than normal.
Ty Lee, when she's just tipsy or "normal drunk" so to speak, is just herself but with flushed cheeks and dealing with a few hick-ups. If she's wasted though, she becomes an angry drunk and will absolutely be mad at everything and everyone, which is a bit scary considering how sweet she is. She's a light-weight, and is the one who has hangovers more frequently.
Azula doesn't drink often because she doesn't like not being in control, plus being sober while the others are wasted is a good idea to prevent them (mostly Zuko) from doing stupid shit AND to mock them for doing stupid shit. It takes a lot to get her drunk, but when it happens, she becomes a clingy, dramatic drunk that is constantly snuggling her friends, saying she loves them, and apologizing for the smallest things. Hangovers are an extremely rare thing for her, but when it happens it is more intense than for the other three combined (yet another reason why she doesn't drink often)
