I found all of the Legend of Zelda stages in the Smash Bros series to be very fun. Hyrule Castle N64 and Temple are both excellent stages and along with the trio is, Great Bay. While I do have a few problems here and there with the stage, Great Bay is a decent stage with decent enjoyment like Peach's Castle.
The biggest and only notable problem I had with Great Bay was, the water where you weren't able to swim in it. Makes me wish that Nintendo had included swimming effects for the characters in stages but, they didn't do that in the series until Brawl. Anyways, the main problem I had with the water in this stage is that if you knocked into the water and didn't recover on the small platforms on the left or right side of the stage and didn't recover in say maybe three seconds for trying to land on the platforms, you would lose a life. The water would drag the character down immediately as soon as he or she stepped into it.
Aside from that minor problem, I found Great Bay to be a decent stage. The cute little turtle that makes a stage cameo in this stage is nice as it would mix the main action of the stage as the stage itself was fairly bland and basic, if you didn't account on the main water effects in this stage.
While the stage itself was small, for a small stage unlike other small stages in the series where they weren't much fun, Great Bay was pretty good for a small stage. Unlike other bland small stages with small platforms to fight on in the series, at least Great Bay mixes it up with it's platforms in the stage doing something different. The main recovery platforms near the bay of the stage would rock back and forth mixing the action up and the turtle cameo would give you extra room to fight on giving you more time to plan out attacks and so forth. The stage design in Great Bay is great but, it's somewhat ruined due to the water effects screwing up the action in the stage.
Overall, Great Bay is a decent stage where it's only main problem is not being able to swim around and screwing up the action for you. Kinda sad that Nintendo didn't have this return in Brawl where it would benefited with the swimming effects. Oh well. Like I said earlier, Great Bay is a decent stage.
