As for Weiss, read back again starting from chapter four, this should have about all answers you need.
As for your ideas, I have no idea about Jaune's nephew, sence canonically he has a lot of sisters and that's all. (But still call him Juan please, it makes me smile.) And implementation of him into the story is even harder. For the second one, I am straigh up bad at intentional comedy, so sadly I have to pass on this one.

"Who's there?" Yang asked, walking from the bathroom and into the bedroom of her dormitory.
"Weiss." The response came back.
"You finally accepted our new friends?"
"Yes, even made one myself."
"... You're joking." Blonde student shaked her head, walking up to the doors and opening them wide open.
"Pfe!" Small red centipede greeted her, being held in the gentle pair of hands almost at her face level.
"And?" Weiss asked, tilting her head from behind the new friend of hers.
"... Can I take a picture?" Yang asked, her tone taking a bit funky accent.
"Of course not!" Weiss protested, storming past her and taking a sit on her bed. "You can't have everything, you know?" She responded as her Sizzlipede touched the pokeball attached to her bolero jacket and entered it in a flash of pink light.
"Great to hear it." Yang shrugged her arms, walking over to her own bed and getting onto the upper level. "Now wait till' Ruby and Blake come back and we have ourselves a happy team."
"Right, I saw them few times playing on the outside..." Weiss nodded with a slight smile.
"Are you... Blushing?" Yang asked, tilting her head in a goofy way.
"Wha-! It's not like that." Middle child of the Schnee's scoffed, turning her head away and closing her eyes in insulted manner.
Mhm, mhm. As if I wanted to believe that."
"Pyyyrhaaa!~" Nora teased as her group stormed into the dorm. "We're back!"
"Oh." Red-haired girl nodded, looking up from the scroll and onto the trio. "And?"
"We brought some friends!" Nora exclaimed, almost breaking from a sudden grip that a pair of hands applied on her shoulders.
"You're not going that way." Ren protested from behind her while Jaune squeezed on the side with relaxed glare.
"Don't worry, we will take care of them." Blonde team leader added. "After all, going after them was on our initiative, not yours."
"Yours, specifically?" Pyrrha asked, slightly curious.
"No. Russel helped us." Ren shaked his head as he let Nora go free.
"You asked Team Cardinal for help?" She asked, sounding as she was taken aback by the explaination.
"Oh, they changed their minds apparently." Nora shrugged her arms as she tumbled up to her bed. "If you walked outside with us, you would see."
"... Yeah."
"We mean it." Ren followed up on the topic.
"Exacly." Jaune nodded. "I mean, I was also unsure with the fact they did it, like, this very morning. But shouldn't we welcome this change?"
"... I still don't buy it." Pyrrha sighed. "I mean, I could go and see for myself. But what if they do it for a show?"
"Moving an inch to check is too much?" Somewhat rude tone came from the doors as the JNPR Team turned around to see Dove leaning against the doorframe with vishous glare. "Or is it just superstition?" He added as small creature covered in iron ore peeked it's head from behind his legs.
"O-Oh, hi Dove!" Jaune stuttered, taken by suprise.
"Sup Jaune, sup Nora, sup Ren." Teen in bronze armor responded. "Sorry for storming in, but I have issues with blatant slander."
"Slander?" Pyrrha asked, standing up from the bed and turning to face him directly. "You can't just say 'we were bad, but no we're good' and expect people to believe you. That's not how it works."
"It doesn't end on words." Jaune retored. "They actually got better. Take my word on this one."
"No, thank you." Red-haired amazonian shrugged him off before noticing small creature behind Dove. "And that scared thing?"
"First of, he has a name." Dove answered with tense accent at the last word. "Second, it's Aron, written and spoke with one 'A' and one 'R'. He added as he crouched down and pet Aron on the head. "Second, they are living beings."
"Should we interfiere?" Nora whispered to Jaune as the other three members of Team JNPR gathered near the doors to the kitchen.
"No." Ren responded quickly. "Let the situation solve itself."
"In that case I said all I had to." Dove snorted as he turned around. "See you in class, poster child." He added as he and Aron walked away just as they came, unnoticed.
"I guess they didn't change at all." Pyrrha sighed before walking to the bathroom.
"Ren, you said the situation will solve itself!" Nora whispered, visibly anxious.
"And it did." Jaune answered first.
"But for worse." Ren added. "And I don't think it will improve soon."
"I guess we have to wait for another combat class to see the result." Jaune nodded, then turning around and heading towards the kitchen.

"Hm?" Cardin asked, suddenly turning his head to the left.
"Sorry, testing a new ringtone." Sky excused himself, hiding the scroll between himself and the bed.
"And?"
"It's absolutely garbage." Dark blue-haired teen groaned.
"Then let me help you as your leader." Cardin smirked, turning around to face Chimeco and Scraggy. "Hit it."
"EEEEEEEEE!!!"
Bang*
"Waaah!" Sky cried out, jumping up into the air and the falling behind the bed. "How did you make it?"
"Well..." Cardin smiled, wiping something dark red from his forehead "My friends over there helped me learn a few words."
"Those within human speech?" Sky asked.
"Nope."
Blast*
"... Wow." Cardin said as he looked back at the remains of the door as Dove walked in throu the frame. "I'm not paying for that."
"As if you could." Teen in bronze armor scoffed while Tepig quickly ran away from him to the kitchen.
"Sky, move up and join Russel back there. Maybe he can teach you something from real life." Cardin said, giving Sky a sideways thumb directed to the kitchen.
"..." He didn't respond, quickly grabbing the scroll and rushing after Tepig at said direction.
"Pfft, coward." Dove shrugged his arms as the doors to the kitchen closed. "As for the door..." He added, crouching down and crouching few remaining pieces of wood that quickly fell back into the gap and expanded, turning the empty space into a doors made out of bronze. "I'm done."
"Dude." Cardin sighed, standing up and stretching his back. "Who bite you?"
"Pyrrha." Dove rolled his eyes, turning left to face him.
"And who did you bite?"
"So far no one. But I'll take shot on Pyrrha at the first combat class we get."
"Not on the arena? Like after hours?" Cardin rised his eyebrow.
"Naaah, in front of the class to break her cocoon of perfection." Dove responded, his tone and face slowly progressing from anger to malice.
"As if you could."
"Ha, ha, hah. Of course I can." Dove chuckled lightly. "After all, I am the best fighter in our team."
"And school-wise?" Cardin asked, giving him a doubtful stare.
"I am the best, still."
"I would love to test that."
"... You're joking, right?" Dove asked, looking up at Cardin. "You doubt me?"
"Let's be honest here, Pyrrha whoops asses of virtually everyone in our year since day one. Every time, every one-on-one, every instance." Cardin explained, leaning forward to speak a bit closer. "You can go at her thinking 'Hmmm, today I'll win because I am the best.'. You surely can! But we all thought so earlier and Jaune of all people had to save my ass from and Ursa while you three just fled."
"And you ain't mad about that?"
"Of course I am you buckethead!" Cardin exclaimed, turning around and lifting the matress off of his bed. "But instead of throwing tantrums and swearing revenge, I got down to work on myself." He added, getting Scraggy to hold the matress up as while himself taking a book out of the bed's inside. "how else do you think I got the idea to go for the pokemon with you?"
"... To get an advantage over other teams?" Dove asked, visibly confused.
"No. That was a secondary reason." Cardin responded, turning around to showcase him a title 'Team Building And Self-Organising As A Means Of Huntsmen Development.' written in black letters over the purple cover. "In here, I got the first one."
"A... Book?"
"Where did you even find this stuff?" Russel asked, storming out of the kitchen with Sky and their pokemon behind him.
"On flea market auction two days after Jaune saved me from that Grimm." Cardin shrugged his arms. "And before you ask, I was reading it at night while you lazies were sleeping."
"Okay, okay. Get to the point." Dove waved his hand in disapproval.
"Ek-hem, as I was saying..." Cardin grunted, checking if everyone was listening. "This book is where I found the idea of bringing pokemon to us."
"And then you... Swayed us with promise of taking advantage of others with them?" Sky asked akwardly, hiding behind Russel.
"I had no idea how you will react." Cardin shrugged his arms. "Like, what do we know of eachother as teammates, right now?" He asked, looking around the room.
"Wait a second, our door is made of bronze now?" Russel asked, pointing at the entreance doors.
"Yup." Dove nodded. "My semblance allows me to replace any broken object with a bronze replica." He explained, turning his head towards him. "Is it news to you?"
"It's news to all of us." Cardin responded. "My semblance keeps my hair the way I made it all the time, because I am too lazy to shave it." He added.
"Hold up now!" Sky shouted, visibly shocked. "These semblances aren't even usable in Huntsmen work!"
"Exacly." Cardin nodded. "So what about you, smartass?"
"H-huh?" Sky gulped, trying to back out.
"Hold on now." Russels stopped him, grabbing his arm and pulling him in front of himself. "You're not going anywhere, without explaination."
"... I don't have one."
"... That's new." Cardin responded first, seeing Sky lowering his head to bland stare at the floor. "Russel, lighten up the mood."
"My semblance removes stress when I'm in casual conversation." Russel shrugged his arms. "Nothing special, really."
"Well, glad that we sorted it out." Cardin nodded, noticing Sky dropping onto the knees and Mienfoo pushing him on the side. "As for you, it's fine."
"Really?" Sky responded, rising his head up and showing the teary eyes.
"Of course, nerd. You're doing all of our homework and never, ever even tried to make a fuss about it." Cardin responded, walking up to him and bringing the guy onto the legs. "Besides, maybe your semblance will be better that all three of ours?"
"If I ever get one..." Sky sighed.
"You will." Russel added, giving him a pat on the back. "We make sure of it."
"... That got sidetracek very fast." Dove commented with a snarl.
"So, what remains to be explained?" Cardin asked, turning his head towards him.
"What all of this has to do with me?"
"You can't just compete with Pyrrha."
"... Scraggy really did smash your head, didn't he?" Dove joked, rolling his head left and right.
"... You said you're the strongest of us three?" Cardin asked, sounding rather confident.
"Well, duh."
"Then fight me as soon as possible over the team leadership."
"What?!" Russel and Sky exclaimed while Dove casually laughed.
"You're on, Whine-chester." Teen in bronze armor smiled, turning around while taking out his scroll. "But, I need to record your concession first. Mind you?"
"Sure." Cardin nodded while Dove turned on the recording. "I, Cardin Winchester..."
"Weiss!" Ruby exclaimed, rushing across the room to hug her teammate. "I haven't seen you all day!"
"Can't... Breathe... "Schnee whispered, feeling the air come out of her at dangerous pace.
"Wow, that's something." Blake nodded, slowly following and closing the doors behind herself. "How is it with you, Yang?"
"Oh you know, getting care of myself." She added as Swablu sat on her head and chirped lightly. "Well, mostly of others."
"Mhm, can tell." Blake nodded as Geodude with Sizzlipede on his head flew up to her. "Hi Geo. Who do you have here?"
"Get off of me!" Weiss shouted, which was followed by Ruby flying across the room and straight into the bathroom. "This is my new pokemon, Sizzlipede." She added, quickly returning to her upper class-self.
"Kfeh." Red centipede squeaked, greeting Blake with moody tone.
"He's a serious kinda, huh?" Blake asked turning her head away.
"Well, yes." Weiss nodded. "But then again, I am too."
"As if I didn't notice..." Yang nodded, giving her a sarcastic stare.
"Not like you take notice to anything around you." Schnee heiress scoffed, turning around at such speed that her ponytail swinged high into the air, almost hitting Blake in the face.
"Okay, okay, chill." Blonde student rolled her eyes before widening her smile. "Can't you take a joke?"
"..."
"Wait, you can't?" Ruby asked from the side, tilting her head like a goofy toddler.
"... Can we not talk about that?"
"Weiss." Blake said, rather unamused with her. "Last time it came to this we got that situation with me."
"Since when do we compare racial tensions to personality traits?" Weiss asked, turning around to face her.
"Since we can." Yang added before taking two steps back and bumping Ruby in the shoulder. "Leader?"
"Let's vote! Who's in favor of discussing the topic says aye. Who doesn't, says no." Underaged girl said, rising her hand into the air.
"Aye!" She said, followed by Yang and Blake.
"No." Weiss followed, lowering her head with sour expression all over it.
"Three to one in votes, we got to talk about this." Yang added, placing her hands on hips.
"*Sigh* Do we really-"
"Yes!" Yang and Ruby cut Weiss short with overwhelming tone.
"Girls, calm down." Blake stopped them, waving her hand in a 'stop' gesture "Look, so far outside of common knowledge all we three know is that you are the heir to Schnee Dust Company and you blamed White Fang, with extension to Faunus, for making your Father angry, and thus, your childhood difficult." She continued. "I know you don't like it, but nether did I when we touched on my issue. So please, stay with us on that one."
"..."
"If anyone tries to hide their own trouble from you, I'll take your side."
"... Fine."
"Boss." Russel said, walking up to Cardin who lied on the bed.
"Yeah?" CRDL leader asked, looking up from the book he war reading.
"I think we have screwed up."
"Don't worry Rus, I have a plan."
"What kind of plan?" Sky asked, joining them from the other end of the bedroom.
"A smart one." Cardin grinned, putting a finger between two pages he was on as a bookmark before swinging the rest to the inner side of the frontal cover with author's insignia written in golden comic sans font.
'Nicholas Schnee'
"Yo, wait, hold up!" Russel exclaimed, slightly panicking while Sky curiously walked up to them. "Isn't he from the snowflake's family?"
"He's her grandfather." Cardin explained. "Kind of a shame for him, really... But to not get sidetracked, he also created the S.D.C. This the the OG Schnee."
"Well, that's news..." Sky nodded. "But, what does he have to do with Huntsmen training?"
"Well, he was a man of many talents if the biographic note is a thing to follow." Cardin scratched his head before turning few pages forward into the chapter titled 'Origins - Publisher's Note'. "For example, he spent more time on being Huntsmen rather than business operations. Further on, he engaged in the large debate on how to train Huntsmen given the threat of Grimm."
"And what is so special about his ideas?" Russel asked with mildly suprised face. "Like, why do you read him?"
"Ideas that stood the test of time." Cardin smiled. "Like, imagine that he was the first guy to arguenin favor of teams of four at academies."
"He what?" Sky gulped, suprised.
"After The Great War, Huntsmen Academies only stared to function. Apparently no one could agree for unitary system." Cardin explained, moving few pages to the right as he looked for a part that intrested him. "Only after he agrued for the cause and convinced Atlas Academy's Headmaster, the idea spread out into rest of Remnant."
"And you think the stuff he wrote will help you dunk on Dove?" Russel nodded with doubtful glare.
"Come on now." Cardin shrugged his arms while making a smirk. "Dove alone is a reason shampoo bottles have instructions. As soon as he sees me putting any plan into motion, he'll freak out."
"Good enough to me." Sky nodded. "So, where do we start?"
